If you have indulged in treats this festive season, then you may have come across several foodstuffs that are soft materials, or were soft materials during processing. For example, the photo shows a slice of millionair's shortbread cut in two, showing layers of biscuit, caramel and chocolate; caramel and chocolate are materials that the Soft Matter Physics group in Edinburgh has done research on (see links for further info).
